What can I do with some left ovr coconut milk?

I am thinking I will make the ice cream as the kids would love that as the rice I planned to use was the one that needs 2 minutes in the microwave.

I might have some arborio rice but I rarely cook it as I assume I will mess it up.

What about if I poach it on the hob, the fish in the coconut milk? I normally just bake it in the oven for 20 minutes with some olive oil.

You can freeze coconut milk if you dont want to use it all.

If I use half a can I put the rest in a tupperware-type container and freeze till next time

For the kids I out it all in the oven but it was taking too long so I finished it on the hob. I liked it, most of the kids didn't.
