I made this for tonight, but I added a bit of red wine that was hanging around. Also cooked it in the oven at 150c instead of on hob, and for twice as long as the recipe says.

This Muffin Topped Beef Stew is gorgeous. I was never a fan of parsnips but they make this stew so sweet. Dont be put off by the topping. It looks heavy in the picture but it is light, a bit like dumplings and really tasty - dc loved it

Chuck steak
onion
mushrooms
stock
carrot
potato
red wine
salt and pepper
bay leaf

Chuck it all in together and put in a low oven for a long time.

You can chuck in any root veg you have/like. DH likes to make a suet crust which he puts on about 20-30mins before we're due to eat. Before he does it though, I check how thick the stew is and if I want it thicker then I mix butter and flour and melt in blobs. Then I let him loose with the suet.

This from Jamie O is a doddle to make and tastes amazing. Don't forget to add the gremolata though!

Someone on MNet once told me to put a teaspoon of good quality Cocoa in to beef stew....I thought they were bonkers but it tasted much richer and delicious!

ooh i did a beef stew this week

beef
onions
mushrooms
garlic
carrots
green beans
beef stock (or if lazy and forgotten flour on beef, then put some sort of gravy thickener in)
red wine

I LOVE beef stew esp with lots of red wine and creamy mash or sweet pots.

Marinate beef overnight in lots of red wine plus garlic, onion, carrots, home-made bouquet garni of rosemary, thyme, few cloves, cinnamon stick. Makes it extra tender.

mummyplonk, thanks for reminding me. Any stew or one pot dish (bolognese for instance) is improved no end by a couple of squares of cooking chocolate.

Try my mum's Devon beef casserole

1.5 lbs cubed chuck steak
I tin tomatoes
Half a pint apple juice
1 medium onion
1 tsp dried herbs (basil is best but thyme oregano or mixed herbs will do)
1 tablespoon rolled oats
Oil

Brown the beef in the oil, transfer to casserole.
Fry the chopped onion gently.
Add the apple juice & tomatoes & stir well
Add the oats & herbs.
Bring just to the boil & pour over the meat
Cook at 180C Gas 4 for 1.5 hours (longer will not harm it)

This produces really lovely gravy, so I like to serve it with rice, but it's also very good with baked potatoes or mash.

I make this one DH says it's better than his Mum's!
