I just made muffins, first time ever but.........

they are awful

Where did I go wrong please. I followed the recipe I got from mn for carrot and apple muffins. They haven't risen at all and they look cooked on top but they are quite runny inside still.

I'm so disappointed

Recipe is by ponymum in mumsnet recipes.

125 grams sr flour
3/4 cup brown sugar
1/2 teaspoon eacg of cinnamon and grated nutmeg
pinch salt
2/3 cup olive oil
2 eggs beaten
3 carrots grated
1 apple grated

It looked very wet when I'd mixed it but as its my first time I wasn't sure if this was how it was meant to look.

You are not meant to over-mix muffin mixture. There can even be lumps of flour in the mixture and they will be fine.

Yes that's true. The not over mixing thing is supposed to be quite important with muffins.

I find that quit hard not to do. Most cake mixtures need a good beating (ooerr) and the first muffins I made were very tough and chewy cos I did that to the mixture.

Sure you used sr flour? I haven't tried this recipe but 2/3 cup of olive oil sounds like a lot. Plus the recipe uses both grams and 'cups'. What size cups did you use, or do you have standard measuring cups like American ones? Grams are weights, cups are volume.

Agree with Stirling and Tsar, over-mixing is what kills muffins. The man on the Betty's cookery course told us so!
