I've got a whole load of sweet red peppers which I've got to deseed tomorrow - any suggestions as to ways I can freeze them beyond cutting them in strips & frying??? Come to that, will that work??? New to this freezer lark . . .

I freeze them uncooked, and then use them in cooking. They lose their crispiness, but other than that, fine.

Alternatively you could liquidise them and freeze, and use them to add "hidden veg".

Fantastic - that is just the answer I needed! I was also thinking of making a big batch of peperonata stew, which I reckon would freeze fine.
Many thanks

You're welcome

Peperonata can be easily frozen, and so can red pepper soup!

Never heard of peperonata stew, sounds fab!

I've just realised that I could also freeze squash & red pepper soup - have lots of too-big squashes so that could be the way forward !

And I now have lots of trays of raw pepper strips freezing ready to go in bags! Now that's classier than frozen peas
