Jaffa Cake Muffins...

These are LUSH!!!!!!

125ml milk
85ml sunflower oil
1 large egg
1/2 tsp vanilla extract
200g self raising flour
100g caster sugar
12 tsp shredless orange marmalade
large bar chocolate

Preheat the oven to 190 degrees centigrade/gas mark 5.

Beat together milk, oil, egg, vanilla with a fork.

Stir this into flour & sugar just enough that all dry ingredients are covered - the mixture should be lumpy.

Spoon the mixture into a cup cake tin with paper cases so that each case is around 1/3 full.

Add a tsp of marmalade to each case, and then top up with batter.

Cook for around 20-25 minutes, until the tops are springy and the muffins are light brown.

Whilst they are cooling, melt the chocolate, and dip the top of each muffin in the melted chocolate (or if they are too hot, spoon the chocolate over each one).
