winter soup recipes?

Hi, does anyone have any creamy vegetable soup recipes that they could share? My DS like the one I always make with celery, carrot, potato, onion cooked in butter then blend up with a little cream, but don't like any of the others I have tried. They are carrot and coriander (which I thought was yummy) and pumpkin. I am getting sick of the same one every week.

I think they like creamy soups rather than broths. Any nice fish soup recipes would be great too!

I do lentil and root vege soup with coconut milk, which makes it nice and creamy.

Thanks janeite am a bit of a soup novice, what sort of quantities would you put in and for the lentil soup would you cook in butter/ oil first or just with water/stock? I am assuming red lentils?

It does sound yummy! What spices go in the parsnip soup? Any links to a good recipe, when I try and improvise, even with the right ingredients it never tastes right

Both of these are great as full meals with some crusty bread.

Butternut and sweat potatoe is nice. Fry some onions until translucent, then toss in about 1 - 2 teaspoons each of ground cumin and coriander. Peel and cut one small/medium butternut into chunks and do the same with one large/2 small sweet potatoes and 2 apples. Add the vegetables to the onions and spices and just cover with water and simmer gently until soft (if you remember and feel like it, put a little fresh grated ginger or ginger powder in about 5 minutes before the end of the cooking time. Allow to cool slightly then use a hand blender to blend. Add approximately 100 ml of milk (adapt slightly according to taste) and salt and pepper to taste.

Also, It's not creamy as such but spinach and pea soup is a standard in our house - lightly fry a little onion then add equal quantities of frozen spinach and peas and add hot stock to cover generously (if using fresh spinach, pour slowly as you want it to cover the wilted spinach not when it's all fresh and high volume). Cook for about 10 - 15 minutes the use hand blender to make it smooth, adding a generous hit of nutmeg and salt/pepper to taste. It will look dark green and disgusting. When serving, put into a bowl with a large tablespoon of greek yoghurt to stir in - it becomes a much prettier colour and much tastier too.

Spicy Parsnip Soup

Ingredients
2 tbsp olive oil
1 tsp coriander seeds
1 tsp cumin seeds , plus extra to garnish
½ tsp ground turmeric
½ tsp mustard seeds
1 large onion , cut into 8 chunks
2 garlic cloves
675g parsnips , diced
2 plum tomatoes , quartered
1.2l vegetable stock
1 tbsp lemon juice

1.Heat oven to 220C/fan 200C/gas 7. In a bowl, mix together the oil and spices. Add the vegetables and mix well. Spread over a heavy baking sheet, then roast for 30 mins until tender.

2.Spoon into a food processor or liquidiser with half the stock and process until smooth. Pour into a pan with the remaining stock, season, then heat until barely simmering. Remove from the heat and stir in the lemon juice. Garnish with cumin seeds.

I made cauliflower cheese soup the other day and it was very nice. Recipe from Jamie's Ministry of Food book

The cauliflower one sounds yummy but my barbarian (AND vegetarian!) children will not eat cauliflower - grrr.

The lentil one is dead easy and can be different every time but basically:

Fry some onion, diced carrots and garlic / fresh ginger if you have it. You can add sweet potato, parsnips, butternut squash depending on what you have. Add cumin seeds, turmeric, some chilli flakes, whatever other spices you've got/fancy. Add red lentils, some vege stock and a tin of coconut milk and cook until the lentils are soft. blend. You just keep tasting until it tastes good - lemon juice added at the last minute is nice too.

Thanks everyone you have given me lots of ideas to go on with, hopefully I will be able to find at least a couple more soups that my Ds's will willingly eat!
