what can I do with elderberries?

DD is very excited by her harvest but I do not have a clue what to do with them.

My Dad always made elderberry wine but not sure how! And that is probably not something that you want your dd to share!!

i like in a cordial but who knows how'd you make that

It goes really well with game or smoked fish but is good on ice cream or a pudding spoonful in boiling water as a sort of cordial type drink.
