Recipes for apple pie?

I know it's simple but I can't find a recipe anywhere in my many books.

What apples do I use? Do I cook them first? Do I need to blind bake the bottom?

If you are putting pastry in the bottom then you do need to blind bake and also sprinkle with semolina when you put the apples in to stop it going soggy. The simplest pie is just to bung chopped apples (any sort though cooking apples break down better but remember to add lots of sugar if using cookers) into a pyrex dish then top with short crust pastry, put a little slash in the middle of the pastry to let steam out then bake for about 40 mins.
