just do normal plain cookies with almonds added.
mix sugar and butter. add one egg and self raising flour. some baking powder and chopped almonds. bake for tenish minutes at 190ish.

i did that, stitch and they came out great.. a bit 'oily' but i think i didn't use the right kind of almonds..but should be okay!!

There used to be a delicious almond biscuit inthe Be Ro cookery book. This was the (eek!) 20 years ago version mind you. Almond rounds I think they were called... must get the recipe from my mum if she's not thrown the book away.

Ah - almond biscuit recipie from Be-ro book

175g self raising flour (be-ro of course)
pinch of salt
75g caster sugar
50g ground almonds
150g margerine
few drops almond essence
blanched almonds

Heat oven to 180c, 350f gas mark 4. Grease 2 baking trays

mix together the dry ingredients, rub in the margerine

add the essence and mix well, bring together using your hands

roll out thinly and cut into rounds. place half a blanched almond on each

place on baking tray and bake for 15 minutes

makes 20
