Too late for tonight but best bolognese i make always comes from slow cooker. Always really tasty when cooked all day on medium.

TheWiltedRose · 22/09/2009 18:44

My mum has started putting red wine in her bolognase, she swears by it!

mashmum · 22/09/2009 18:45

Finely diced anchovies.

mashmum · 22/09/2009 18:46

Oh and it is best made the day before, then reheated the next day (the flavour really develops).

movingnow · 22/09/2009 18:49

A lot of red wine (in addition to all the usual ingredients), plenty of tomato puree and long, slow cooking (at least 2 hours)

movingnow · 22/09/2009 18:50

.......it's best once it's been frozen, seems to mature

cleaningsucks · 22/09/2009 18:54

oh, these food threads are so mean. i never bother with supper (no-one to cook for/eat with when dd has been to childminder) and usually its fine, but now i'm desperate for bolognaise. damn.

here's mine:

600g minced beef
1 tbsp olive oil
1 large onion, chopped
3 carrots, finely grated
2 cloves garlic
2-3 large tins chopped tomatoes
3 tbsp Bisto
2 tbsp tomato paste
half a bottle rough-n-ready red wine
thyme & oregano & 2 bay leaves

Fry meat. Drain off fat on paper roll. Fry onion & garlic on medium heat in olive oil. Add carrots. Lower heat. Add tomato paste, wine, Bisto & chopped toms. Stir in herbs. When simmering, add meat. Turn heat to very low & simmer for 30-40 mins, adding water if too thick.

cariboo · 22/09/2009 20:42

oh, also 2 tsps sugar and a few shakes of worcs sauce. some celery salt & a few drops of tabasco is good, too.

mwff · 22/09/2009 21:04

tabasco = chilli

Lio · 22/09/2009 22:06

PS Mine it not impressive, I am just lazy and would rather make an inauthentic vat of the stuff 6 times a year than do it more frequently

ilovegarlic · 24/09/2009 14:23

onion, grated carrott, grated courgette and tinned toms work really well

roosterroo · 22/10/2009 18:20

mmm might be on the menu here too!!!

but not with carrot - thats just wrong
