Spicy coconut chicken curry - recipe help please

I made a curry a few weeks ago and I can't find the recipe anywhere. I am going to try it from memory but wondering if I am missing anything fundamental. How does this sound?

Chicken breast and potato chopped in bite size pieces.

Make marinade with curry powder, oil and garlic and pour over chicken and potatoes.

Later, fry an onion. Add chicken and potatoes and brown. Pour over 400ml coconut cream/milk and cook for half an hour.

Anything missing?

Nah I wouldn't add chilli to that

Maybe fresh ginger in the marinade though?

You could bung in a stick of cinnamon or star anise while it cooks

I woudl squeeze a lemon in at the end too, to 'lift' it a little

actually I would cook the chicken/potatoes in a cup of stock for 15 minutes before adding the coconut and cookign for another 15 mins

Now you mention it I think there was ginger in the 'original' marinade. I'll do that. And I'll cook in stock first - even that rings a bell!
