Vegetable based meals for a carnivore

Hi
Like everyone, I'm trying to cut down on the cost of the weekly shop and I'd like to add some meat-free evening meals to my planner. I already make pasta sauce, soup etc but I'd like some veggie dishes that stand on their own and don't feel like something is missing IYSWIM.

DP is a confirmed carnivore (and coeliac too) so I'd be grateful for any suggestions you can give. (I make my own gf pastry, but it only really works for flan-type pies)

Dp is a confirmed carnivore but will happily eat puy lentils cooked with onion, carrots, celery in a rich stock and port mixture, served with roasted potatoes and buttered savoy. The lentils are cheap but taste quite luxurious and I guess you could use something cheaper than port, or even a tin of tomatoes (although they are the food of the devil!).

A caramelised onion flan is lovely and doesn't taste as though something is missing. I use gruyere in mine but I suppose any cheese would do.

Huge mushrooms, stuffed with garlic butter and roasted? Stuffed peppers?

How about a vegetarian Shepherd pie? You could add quorn or similar to the dish?
