I have a fancy for making soup today as we are having a late lunch I was thinking of soup as a supper.

I have one squash a few carrots, couple small turnips, onions etc. Would it be too sweet?

Any advice/recipes welcome

I would instinctively leave out the turnips for this one as I think they would jar a bit. (Love turnips though). Bigchris, would it be OK if you gave me a lift then I can have a glass or two of wine - thx.

There's only one squash don't invite everyone!

Butternut makes divine soup all on it's own, I'd leave the other veg out if I were you.
This is my favourite recipe...

1 fresh butternut squash, peeled, seeded and cubed
1 large onion, chopped
2 cloves garlic, crushed
2 cups of chicken stock
Half a cup cream
1 tsp curry powder
A squirt of Worcestershire sauce
Salt and black pepper

  1. Toss the chopped onion and garlic in a pot and saute, don't burn or caramalise. It should be blanched but still white.
  2. Add the peeled butternut and chicken stock and bring to the boil.
  3. When the butternut is soft, mash (don't liquidise or pulverise!).
  4. Add the other ingredients and stir
  5. Season to taste with salt and pepper.

Sounds lovely; though I agree, leave out the turnips if you can.

I would add some spice to take the edge off the sweetness- maybe paprika? And a dash of cream. Yum.

Thanks boudoiricca, sound divine. My only concern is that the squash is only small and folk are inviting themselves willy nilly

The curry powder sounds unusual though?

The curry powder is what makes it! It's really, really subtle. Honest...

Ok squash is obviously smaller again when I've peeled it so I've diced a couple of carrots as well.

We've hit a snag though fellow gourmets, I have no curry powder I've chucked in a teaspoon of paprika as well as a good glug of Worcestershire sauce.

Bad housewife that I am I only had one chicken stock cube so I've added that plus a vegetable stock cube and it is currently simmering away nicely.

If we are not having it until 7ish tonight I'll add the cream and more seasoning later.

Fingers crossed

Let us know how it works out!

catinthehat2 · 06/09/2009 11:41

Yes we all will Boudoiricca. Aren't you coming though? Thought it was a general invitation.

Well the soup turned out ok, I think I personally found it a tad too sweet for my taste.

It only made about 3 bowlfuls so I'm eternally grateful you lot couldn't find me
