Need a recipe for a dinner I can cook in advance or rustle up quickly...

I'm having elderly relatives over for dinner soon but will be spending the day sight-seeing with them first.

So I need suggestions for what I can make in advance or very quickly once we get home - I'm not sure they would like curry/chilli/spag bol - the usual things I could make in advance and as I will be out for the day a roast dinner is not practical.

I'm looking for something that will be a bit special too as we haven't seen them for a long time...

A nice pie either homamade or nice bought one. Veg can be prepared and left in water.

Why not make a casserole the night before - something like this chicken chasseur and then just reheat when you get home, and you can do the veggies then too

A casserole would be an obvious choice but I was hoping for inspiration for something else (but don't know what!)

Salmon or something else fishy? I know my old dad thinks that salmon not out of a tin is incredibly posh.

I do have a nice recipe for salmon - I could do a lot of the prep in advance too... the main problem is not knowing their likes and dislikes. It's so long since I spent a lot of time at their house that I can't remember what sort of food they enjoyed...
