What do you do to your roast chicken to make it extra yum?

Doing a roast chicken on Sunday, but wondering if we are missing any tricks to make it extra yum. What do you do to yours?

I always make a stuffing and stuff the breast then drape with at least half a dozen rashers of streaky bacon.

Both my children seem to prefer the crispy bacon to the chicken

Slow roast it!

  • brown in a casserole on hob first, then put in chopped celery,garlic,leeks and soften, then add chopped tomatoes, tomatoe puree, dash of worcestershire sauce, and chicken stock - bring to boil, bung in oven on gas mark 2. Leave for 3-3.5 hours and it will be so tender the meat will just fall off and melt in your mouth.

(Can add streaky bacon at the beginning for a bit of extra)
