What can I do with a ton of dessicated coconut?

I'm having a cupboard clear-out. Have come across about 1kg of dessicated coconut, bought when I was having a home-made-muesli phase (yes, I know).

How can I use it up? Preferably in a delicious baked concoction of some sort, to make up for the muesli moment .

Chocolate surprise

6oz dark chocolate
1oz butter

melted & poured in to a greased lined tin

1 tblspn SR Flour
2oz cherries
1.5oz coconut
3/4 cup of sugar
2 eggs

Mix then pour over the (set) chocolate - make sure you cover the choc completely or it burns

Bake until golden brown on Gas 5/6

Lol TheFoosa. Can't do that - am officially on a waste-reduction mission and must use up all unwise purchases!

Some combination of chocolate surprise, coconut ice or macaroons sounds good to me.

Are they young or old ones?

If young, drink the water and eat the flesh.

If old, then open them, discard any water, remove the flesh, and make it into coconut milk. Better than the canned stuff.

Use for curry.

I sometimes add dessicated coconut to porridge at the cooking stage.

Three actual coconuts. They are oldish now - DS won them on a shy in May.
How do you make coconut milk from the,?

You grate the flesh (could use a food processor), then cover with very hot water (not boiling), and leave it for 15 minutes. Then strain.

You can make first and second pressings to get a creamier or more watery mix.
