This is my dad's favourite pudding and as it's his 70th birthday next week I thought I'd make one - but I can't find a recipe - can anyone out there help ?

Queen of Puddings

Ingredients
4 eggs
600ml milk
100g fresh breadcrumbs
3 to 4 level tbsp raspberry or strawberry jam
75g caster sugar

Separate 3 of the eggs and beat together the yolks with the other whole egg. Add the milk and mix it well. Stir in the fresh breadcrumbs.

Spread the jam on the bottom of an oven-proof pie dish. Layer the milk and egg mixture on top and leave for 30 mins.

Bake in an oven at 150º Celsius or gas mark 2 for about an hour until it has set.

Meanwhile, to make the meringue top. Whisk the leftover egg whites until they are stiff, then fold in the caster sugar. Pile this on top of the custard mixture and put it back in the oven for another 15 to 20 minutes until the meringue is set.

Serve hot or cold

it worked perfectly and was delicious - thank you Cocococo - Dad loved it and there's a wee bit left for my little boy tomorrow...
