I've got a dish full of leftover veg and new potatoes from yesterday's roast dinner. If I scrat around there must be eggs, cheese, etc. ANy ideas for something simple and quick to go with my leftovers?

Make an omelette containing the veg or hard boil some eggs, slice them and layer onto veg, cover them with a cheese sauce and bake until it bubbles then add breadrumbs/grated cheese to top and grill.

If you have a tin of tuna or the like you could make fishcakes. Mash everything up and put into balls and breadcrumb them. I add mayo and grated cheese to my mush and then cook in the oven.

why wouldn't they mash? are they cooked already? if not boil them, if yes then micro them with some milk and butter to soften and I'm sure they'd mash as normal?

boil the tats a bit slice them and put them in to the ommlette then grate cheese over
