Need a Good Chicken Soup Recipe!

No, I've never made it. In fact, I've never made any soup. But have a roasted chicken that needs used.

ANY suggestions appreciated.

put the whole carcass in a pan (skin, bones the lot)

quarter an onion, chop up carrots (lots and lots of batons are best) and celery add water to the level of bones, add salt and a bay leaf

bring to boil and simmer covered for about 2- 3 hours, add a chicken stock cube in last hour

when it cools you need to strain out the bones but keep the chicken and veg (you can also take off the layer of fat when it cools)

serve over white rice or with vermicelli

that makes a clear broth that is great if you have a cold btw
