leftover roast beef

need a good recipe for leftover roast beef - it was a Sainsburys joint on special offer and was as tough as old boots. Wont be buying their meat again - need to use it up though as am loathe to give such a big piece to the cat!! Any ideas on how to make something yummy with it that will make it a bit more tender???

For my Sunday Roast I always carve the meat then put it in a big pot with water (enough to easily cover all the meat), onions/leeks and a beef stock cube. Let it simmer away for about an hour and not only do you have thee most tender beef, you also have fantastic gravy to go with it!

Or you could do the same, but cube the meat and add carrots and a bay leaf to the pot. After an hour pour it into a pie dish, cover with Puff Pastry and cook for half an hour... Hey Presto you've got a fab Steak Pie! HTH

slice it .. fry onions and mushrooms add beef and stock (can add carrots, potatoes, root veg if you want) .. cover it and cook it gently (in oven low / on hob simmering) for a couple of hours .. anything up to 3 hours will do
