How to make home made chips?

I tend to cut up potatoes into cubes and saute in veg oil, but they always taste and smell a bit 'petroly'
What am I doing wrong?

I cut into chip shapes and shallow fry - drain and dry off a bit with kitchen roll, then add some salt.

my sis does cubes and adds rosemary and garlic they are gorgeous.

I find rapeseed oil is good for frying chips as it is very light.

that isn't chips though ww. i don't know what it is, not sauteed or fried potatoes as they are usually parboiled first.

chips - cut into chip shapes, soak in water for half an hour. dry thoroughly and cook in medium heat deep oil for a few mins, drain and then turn heat up, refry and voila. i usually use a thermometer for this.

oven chips - cut into wedges, put into pan of cold water, bring to boil and immediately drain then into baking tray with oil, salt and rosemary if you like. hot oven 25 mins.

I always chuck in a vegetable stock cube when par boiling chips. Adds extra flavour

Fishie - how much oil for oven chips? Just enough to coat all chips?

yes, i line the tray with foil and shake it all around. oven should be hot first otherwise they will stick - actually the oil / tray should be too but i find that all a bit hassly.

what fishie says for chips, 170 for medium heat, 190 for high heat - groundnut oil is excellent

I also do oven chips as per fishie, but don't parboil first and they are always fine. I always use olive oil for wedges.

The spud type really makes a difference too - Maris Pipers are my favourite.

peel, cut, preheat fryer to 100degC then assuming standard-ish sized chips cook for 10 mins (they will be cooked but with no colour), drain, and put fryer up to 180 - fry chips until brown.

It's a lot less faff than Heston Blumenthals thrice-cooked chips and delivers great results.

I tend to stick my cubes potatoes in the oven too and either use olive oil or rapeseed oil together with seasoning and maybe throw in some rosemary & thyme as well. They always come out sweet and delicious, the smaller the cubes the tastier they are!
