Hi

I want to make a white wine sauce as I have some white wine left over to go with salmon and new potatoes tonight. I'm scratching my head thinking how to do it though. is it just a white sauce with wine added? If so at what stage should i add the white wine? And should I still add milk or will it curdle?

thanks!

i'd do something emulsifying with butter and a shallot.

Put some half an anions in a sauce pan with butter, let the onions go soft, add white wine, salt pepper, creme fraiche...
