I have defrosted some for tea and are serving it with mash, but I don't want it to be dry. It looks like firm now iyswim.

Poached in milk or baked in the oven with olive oil or something else entirely?

TIA.

Poach in milk, then remove when done, Add some cream to the milk and reduce down to a creamy consistency. Add chives last minute and serve over the fish and mash.

One of Delias I think, I love it.

I will try that way next time as it sounds delicious. Thank you.

I ended up baking it in the oven with a bit of olive oil and served it with creamy leeks and parmesan mash.

It is delish, baker girl, and also VVV easy. Real comfort food, mash and creamy sauce!

Creamy leeks sound yumm too

That's the recipe I always use too!
Alternatively you could put a poached egg on the top.

We had Smoked Haddock last night but I made a Smoked Haddock Chowder and it was lovely with lots of crusty bread - DC actually finished it all!
