What to do with beetroot?

My veg box has just been delivered, and there is some beetroot in it. Any tasty ideas for what I can do with it?

juice it - mix with carrot and apple juice
finely grate and use in salad
roast, then skin, and eat hot with butter

so do you take the skin off after you have cooked it? you dont peel it first?

Leave the skin as undamaged as poss while boiling, helps keep the colour in. Peel afterwards - it slips off easily.

Then for best results feed to a hypochondriac and wait till they have a wee.

No, cook in skin, preferably for a long time in the oven or boiled on the hob. Then the skin should peel off really easily. Is GORGEOUS and sweet when cooked from fresh.

Grate it raw. Really nice. Don't care for it any other way I must admit. DH loves it boiled in it's skin and then served cold sliced in sandwiches with mayo.

grate it and use it to make a risotto, and it after the wine.
it sounds a bit but it is soooo yummy.

I had some last week and roasted in the oven, wrapped tightly in foil with few spoons balsamic vinegar (with thanks to Jamie Oliver). Just washed it first, then once was cooked and cooled slipped off the skins. We ate it sliced with a salad with feta was YUM. My DH declared it his favourite thing ever!!
There is a yum risotto recipe somewhere too, with vodka and cream in it think in the Cranks book or something.

As penona - baked much nicer than boiled. Then serve with some goats cheese and some puy lentils, boiled and dressed with olive oil, lemon, garlic and anchovies. Mmmmm.

Also Hugh F-W has a really nice beetroot soup recipe with tomatoes in it (he makes his own, but passatta works fine).

Borscht is delicious, am tempted to make some myself.

Good food has an aussie burger recipe using beetroot.

400g mince steaak
100g cooked beetroot
2 mini garlic and coriander naan
50g bag rocket
4tbsp soured cream and chive dip

  1. Mix meat salt pepper shape into burgers
  2. Slice beetroot split naan bread, griddle naans, add burgers to griddle
  3. On each naan put rocket, burger, beetroot and dip.

Boil it, peel and slice, then put some white wine vinegar and a bit of salt on it and eat it cold.

chop it. boil it. leave contents in pan whilst feeding baby. then mix with fesh salad leaves. dress with oil and pepper and put in bowl, next to tv-watching spot on sofa. Go to help toddler have a wee. come back to find dog eating it. Get chocolate out of fridge instead....
