Great Halloumi recipe

Don't often follow recipes but thought this one was worthy of posting (the Bonfire mix is from Asda)

Halloumi and Spinach with Bonfire Mix

1 ? 2 oz pine nuts
Olive Oil
Large chopped onion
Clove of garlic ? crushed
2 tablespoons of Bonfire Mix
Large tin chopped tomatoes
Tin chick peas
1 pack of Halloumi ? cubed
1 pack fresh spinach

Toast pine nuts in a little oil and set aside.
Soften onion and garlic in olive oil.
Add Bonfire Mix and stir for 1 minute.
Add tomatoes stir until heated through
Add chick peas and stir until heated through
Add Halloumi and stir for 1 ? 2 minutes
Add spinach and stir until piping hot and wilted.
Top with pine nuts and add chopped coriander if desired.
Serve with cous cous.
Add more chilli if desired

I've never heard of bonfire mix either.

DH and I like fried hallomi, we don't get any further than that! Not v healthy though

Bonfire mix is a tin of spice mix from Asda which contains chilli, ground cumin and coriander, various other spices and some garted dark chocolate. Think I've seen similar in Sainsbury's under some Aussie name.

I love the squeaky cheese on its own too, great in thick slices on the BBQ.
