how d'you make potato wedges?

V trivial qu here girls but wanna make potato wedges (baking them in oven like big fat chips) which don't turn out to be slimey horrible oily things with vaguely undercooked middles... any tips? Thanks xx

cut them into right size and shape, toss in a little olive oil, sprinkle with paprika, stick in oven for 20-30 mins depending on size of wedges

past nanny who's fabulous cook used to soak them for couple of hours in a bowl of water before baking - I think this means they cook more evenly & end up crispier, but no idea why!

I normally par boil for about 5 mins just to start them off then do as AQ describes, oven on about 200oc, olive oil and sometimes add crushed garlic and rosemary.

I do exactly what AQ does, sometimes with a little flour too, sometimes use chilli powder or cayenne pepper - whichever comes to hand first! Add sweet potato too - lovely!

I think the soaking removes excess starch. I've never bothered boiling.

I like making wedges with tiny potatoes, with the skin still on, very tasty.

I just cut a small potato into quarters lengthways, roll in olive oil to lightly coat then bake for about 30 mins.

Thnaks folks, tried binkie's past nanny's soaking tip, plus paprika, great success, now sure how I almways managed to cock it up before!
