Bitter tomato sauce

I've made a pasta sauce but also slung a load of veg in which I am going to puree. I'm doing it in the slow cooker. Thing is it tastes a bit bitter (possibly due to over large courgette - should I have deseeded it?). Anyway, how can I counteract the bitter taste? I've added a sprinkle of sugar and salt but still bitter.

add a little more sugar? thats how I always counter the bitter taste.

I add mexican/fajita spice mix don't know why but it helps
