How long does it keep for?

In the fridge it will keep for a few days if stored in floured cling film to stop it sticking together....tends to go sticky in fridge and difficult to separate if not layered correctly... and kept too long in there. I have made it in batches and layered in cling film and frozen it....all was great when defrosted. IT can be dried and used months later. Have only dried one batch and kept for about a month and it was fine. HTH

Or freeze the paste before you roll it out, as you might with pastry.
