I was in Waitrose yesterday and was goign to buy two stuffed mushrooms but decided at the time I could easily make them myself so bought 2 Portabello mushrooms, gruyere chees, cheddar, garlic and one big tomato and can remember I need breadcrumbs now I have all of this I don't really know what to do - anyone got any ideas or has anyone done this before if so any help would appreciated otherwise I woudl have wasted a few pound on ingredients (those mushrooms aren't cheap)

take the stalk out and then fill with the cheese and garlic. drizzle with oil and then bake in the oven until cheese has melted

i'd just shove what you have on top, cheese last. i suppose the breadcrumbs are to stop it being too runny. just had stuffed tomatoes for lunch, with spinach, peppers, cheese on top with a lovely spicy tomato sauce. mmmmmmmmmm

I remove the stalks, brush the mushrooms with olive oil, and then in a bowl mix up the chopped mushroom stalks, skinned and chopped tomato, finely chopped onion and celery, cooked rice and breadcrumbs, stuff the mushrooms with the mixture and top with cheese. You could add the cheddar to the mic and use the gruyere to top them. Stick them in a baking tray in the oven, cook for 20 minutes.
