Any aubergine starter ideas please?

I vaguely remember having a lovely aubergine starter a few years ago, it was kind of slices of aubergine, alternated with slices of mozarella and tomato I think? Does anyone have any similar recipes or ideas as to what else I'd need to add to this? Tomato and olive oil perhaps? Thanks.

Yep, grill or quick fry the aubergine slices, salt it well beforehand to take away any bitterness and so it absorbs less oil when cooking. Let the aubergines cool.

You can also buy jars of pregrilled aubergine slices in different flavoured oils.

Once arranged on the plate wit alternating mozza and tomato, drizzle olive oil on top and sprinkle on some torn fresh basil leaves, yummy!

There is also a hot version where the aubergine is served hot in a tomato sauce with the mozarella melted on top.

melanzane parmigiana it's called and it's one of my favourites. Try googling for recipes.
