Recipe to use up white wine which does not involve chicken please anyone?

I have a glass or two of white wine to use up in cooking (is past drinking by a smidgen) and would normally, boringly, do chicken and peppers in white wine. However, really don't fancy chicken and actually have none in anyway.

Any other ideas that are not majorly time consuming?

If you have any pork chops or a tenderloin you can make a lovely creamy tarragon sauce to go with. Really easy too.

You need-

wine
double cream or crème fraiche
big pinch dried tarragon
chicken stock(if necessary or in absence of wine)
salt and pepper

Brown your meat in a fry pan then transfer to an oven dish and finish off in a not too hot oven (150ish).

While pan is still hot de-glaze it with the wine and bubble it on high heat for about 5-10 mins.

Reduce heat and add cream and tarragon and season with salt and pepper. Cook for a further 5-10 or until the cream has thickened slightly.

Removed meat from oven and add cooking juices to sauce.

If it looks like it needs it you can add some stock to thin it.

Serve with rice or garlicky roast potatoes and some green veg.

Stick it in ice cube tray and freeze it. Great for keeping for risottos etc. in future

raw king prawns cooked in garlic, olive oil with white wine added and reduced a little. Next season and throw over lots of fresh herbs and eat with French bread. Yum

Had the most delicious mushroom and whit ewin erisotto which I had totally forgotten about as en easy evening meal make. So, thanks for reminding me!
