Freezing carrots

I tried blanching and freezing some carrot batons so that I could just cook a few at a time to feed my son (6 months) as he seems to love them.
Their texture is really spongy though, is this normal?? Did I not blanch them for long enough? DS still seemed to like them mind you, it was just me that didn't think they were very nice!

I think carrots don't freeze that well tbh
