What do you do with frozen (cooked) prawns re: a paella, do I just chuck em in or do I need to defrost them first? I know nothing about seafood.

chuck em in

the heat from the paella will defrost them (assuming you are cooking for a few more mins)

I just throw them in from the packet.

If they are pink they have already been cooked, if they are grey they are raw, but would probably be in their shells still.

After rice has absorbed nearly all the liquid, I put prawns and mussels in (sort of wedge them in a big circle) cover with foil and steam until I am ready (usuallt after a glass or two more of vino).

I wouldn't use cooked althoguh i would do from frozen.
