Could someone please explain to my husband why this is not safe for us or our ds to eat, because he won't listen to me.

Salmonella, rancidity, mould, e-coli, need I go on.... Am not obsessive about out of date food but since doing Advanced Food Hygiene course I know which items you can fairly safely take a chance on and which must be binned. Week old turkey must be binned.

because you will on spend the night on the loo (probably with a basin on your lap too)

He insists he's eaten it lots of times, and won't accept he's just been lucky.

Am trying to explain why it's one of the foods you just don't take a chance on...

Let him, you'll not need to explain it again to him

No don't go there! I am a Food Safety trainer and would not advise this! It is a very high risk food and should be BINNED!!

I wouldn't let the dog eat it, much less any of the people in my house
