how do you make your shortcrust pastry????

I'm crap with pastry. it either cracks when I try to roll it out or is so wet it sticks to the work top. I have to make a meat and potato pie for tea. Help! Any fail safe receipes. I would buy ready rolled but can't get to the shops

These days I make it in the food processor. Delia would disapprove but the fact is it will still be lovely.

Basic recipe one part fat to two parts flour, and as little water as you can get away with adding.
Butter, or half and half butter and lard, makes it taste nice.

If it cracks I wouldn't worry, just push it together with your fingers and carry on.

oh and if it sticks just flour everything (worktop, hands, rolling pin) some more.
