What went wrong with my muffins?

I made muffins for the first time, cherry and almond ones. I followed all the instructions, folding in the flour to the egg and milk mix quickly and gently, but they still turned out a bit tough and chewy. Nothing like the light moist ones you get in expensive coffee shops! Fortunately the kids didn't care and ate them anyway, but where did I go wrong?
Or else, can anyone recommend a good recipe? I hate the ones that use oil in them BTW. Always seem to be greasy.

they will never come out like th eones in ocffee shops, live with it

butter makes for heavy muffins IME, try the oil

also add a tablespoon of vinegar to the mix - you don;t taste it but it helps it rise by reacting with the bicarb

and personally I stir the egg and milk into the dry ingredients rather than as you describe

Maybe I should just stick to fairy cakes then! (Or starbucks....)
