I've only ever used them in the winter - for stews and to bulk wintry meals out - is there anything easy to make with them in the summer when I don't want hot filling stews and casseroles??

We had lentil dhal a couple of nights ago - you can't eat salad every night!

well we usually have salad (instead of vegetables) with "something".

So no different in winter to eating veg every night .

I don't know how to make dahl

Get a plain bikini and cover it with glue. Dip it in the lentils and ta-da! a bright and original summery swimsuit.

Lentil dahl is very easy FAQ
There are a couple of recipes on the MN recipe pages

We had lentil and spinach pasties for dinner. Wholemeal pastry, lentils cooked with a few frozen spinach blocks and some cumin, chilli and coriander.
Were quite nice - ate with a nice bowl of carrot and coriander soup
