i have a mint plant and wondered what i can use the mint for? any recipes where i can use it would be welcome!

couscous with roasted veg mixed in, toss in some chopped mint and parsley. lots of black pepper, squeeze of lemon. yum.

Tzatiki needs mint - and is delicious.

Fresh mint tea is excellent - plain or with green tea can also be nice (if I use green tea too I tend to cheat and add some honey too - Moroccon style).

I don't have the exact recipe to hand, but there's a greek meatball recipe that uses mint. Delicious - it's basically your standard meat, onion, garlic with a bit of cumin, coriander, bread and fresh mint.

Also, fab spicy chicken recipe:

marinade 2 x chicken breast w/ juice of one lime, big handful of mint (chopped), tsp of fresh ginger (grated), tsp of turmeric and tsp of garam masala, 'normal' size pot of natural yog, 3 x chopped mixed chillis (deseeded if you like). Skewer, and chargrill on the bbq or in cast iron griddle. Yum...

Actually, my mum used to make tomato sauce with mint instead of basil for pasta. It's absolutely yummy and cheaper than basil, yay!

I used to do a thai dish with ginger and mint, try googling it.

And a bit chopped into a salad is yummy - works well with tomatoes, cukes, radishes, a little spring onion, and a lemony dressing.
