1kg loaf tin greased and base-lined
oven to 180/160 degree fan/gas Mark 4
125g butter at room temp
170g golden caster sugar
2 large eggs, beaten
1/2 teaspoon vanilla essence
400g very ripe bananas, coarsley mashed
100g pecans, coarsely sliced
250g self raising flour
beat butter with sugar with electric mixer till pale and fluffy
gradually beat in eggs and vanilla essence
carefully fold in bananas/pecans and flour using big metal spoon
transfer mix into prepared loaf tin and smooth surface
into oven for 1hr or until golden and firm to touch or skewer comes out clean
