Can I make muffins without paper cases?

I've started the mix and I don't have any muffin cases, just a muffin tray... do you think I can make muffins without making them in muffin cases? Or will the mixture go everywhere?

I have always used cases...they do rise quite a lot when you bake them so they might go everywhere. Do you have a loaf tin? Could you do a loaf instead, just up the cooking time a bit?

I think you can just use the tin. Like with a big cake?

Yes you can - just lightly oil the tins. Use a spray if you have one.

Read in a Nigella cookbook (Feast iirc) that she bakes some muffins without cases, she uses brown greaseproof paper - puts a square of it loosely in the tin and put the muffin mix on top, the effect is that the greaseprrof paper looks all tulip like when cooked. She did it purely for aesthetic reasons and the pictures did look nice.

I know, it looks lovely in the pics, like a £3.50 muffin from a really smart cake shop.

I have tried to look up a picture link on google but funnily enough can't find one.

I have actually been meaning to try it out but I know that my ham fisted efforts will certainly not look like the Nigella originals

i know i am late to this, but yes, you can! I made some this morning and had already made the mixture before realising i had no cases
they came out absolutely fine

for future reference should anyone wonder... the baking parchment thing is a brilliant idea (thanks GetOrfMoiLand) worked perfectly and they look super rustic!
