Marinade for prawns

Hi,

We're having friends for supper on friday night and I thought I'd do chermoula prawns on the bbq. The marinade is mostly lemon juice/olive oil/parsley/coriander and a few other spices. Do you think I could make the marinade up thursday night and sit it in the fridge for the day on friday? Then coat the prawns that night. I work fridays and it's too hectic to prepare the whole thing after work and putting dd to bed etc.

Hello thighs

You can definitely make the marinade up the day before, no problem, (although I find fresh lemon juice goes a bit 'wierd' after more than 48 hours out of the lemon iyswim!)

And you have a good idea to coat the prawns when you want to cook them, rather than let them marinate overnight as they'll get cooked by the lemon and the outside will go all feathery.
