If you just mean the large muffin style tins then, this is a brilliant recipe for cup cakes (NOT fairy cakes!!)
120g plain flour
140g caster sugar
1 1/2 tsp baking powder
45g butter, at room temp
120ml whole milk
1 large f/r egg
1/4 tsp vanilla extract
Mix flour, sugar, baking powder, butter & pinch of salt together in food processor or with a hand held mixer, until you get a sandy consistency.
Pour in half the milk & beat again.
whisk the egg, vanilla and remaining milk in another bowl, then pour into other mixture. Continue mixing for a couple of minutes, then divide mixture into 12 cupcake cases and bake for 20-25 mins in oven (180/fan 160/ gas 4.
For the vanilla frosting, mix together 250g icing sugar, 80g butter, 25ml whole milk and a couple of drops of vanilla extract - keep beating until it is light and a bit fluffy.
