cooked beetroot - help!

I cooked some beetroot last Thursday, just remembered it is still in the fridge. It looks and smells ok but will it still be safe to eat?

yes it will be fine if there is no visible mould groewing on it.

It does grow lovely white mould if its not in vinegar.

Are you going to make beetroot chocolate cake?

no, didn't make cake with it - had it for lunch in a salad!

am intrigued by cake with beetroot - do you have a recipe please? Am sure beets will turn up in the veggie box again!
