What can I make with one egg yolk - leftover from Banana cereal bars - plus I have other ingredients

Preferably something suitable for lunch boxes.

Have a good stocked baking cupboard.

I'd use it as the binding for biscuits with a tbspn of milk - then would be similar to a whle egg.

something like:

100g butter, sugar, brown sugar
1tsp vanilla essence
175g sr flour
1/4 tsp salt
1 egg (here your yolk plus 1 tbsp milk)
175g filling - cherries, choc drops, currants etc.

cream butter and sugars, beat egg and vanilla together and add to sugar and butter. mix well

add in flour and salt, mix, and filling and mix

drop rounded tsps on lined baking trays well apart

bake for 12 mins 190c, will be soft when come out of oven but firm on cooling

leave for 5 mins then remove from paper to rack to cool.
