Am using up food making butternut squash risotto v.dull and a bit bland. Any ideas to make it taste nicer.

Have usual wine, stock, parmesan in it obv.

Sage? Sage is good with squash, I believe.

A little bit of sizzled bacon perks anything up!

Ah. Imagine you may have already made and eaten the risotto by now . Hope it was tasty!

sage fab, about 10 mins before the end. Also goat's cheese v.v.yummy with b'nut squash.

chilli oil to roast the butternut squash in.

GrimmaTheNome · 19/06/2009 20:14

and obviously, lots of black pepper?

Chili flakes might go ok with butternit squash (not as well as the sage).

If you're not veggie, then some crisped bacon maybe

Great idea re: chilli oil. DP puts in chilli flakes which is a bit much

GrimmaTheNome · 19/06/2009 20:15

crossed posts, and I don't fancy a butternit...

chilli and crisp bacon

AitchTwoOh · 19/06/2009 20:17

oooh ,yes grimma.

Thanks for all the replies.

I added sage and lots of parmesan. Sadly no goats cheese and we don't eat chilli. I roasted the squash with sage as well which helped I think?
