Inspiration needed for cake stall at school fun day! Individual buns/muffins ideally

I'm going to do choc chip muffins but fancied doing something else, something that will make the kids go "oooh" and buy em!

I made lemon meringue cupcakes last week. Lemon muffins, with lemon butter icing on top, and meringue nests bashed into crumbs and sprinkled over the top. Will dig out the recipe if you want it?

they are my favourite thing ever you can change them for everytime of the year easter, valentines, xmas, birthdays, halloween etc - shame you cant get them in time though

110 g butter or marg
170g caster sugar
170g self raising flour
1 level tsp baking powder
2 lrg eggs
grated rind of 1 lemon
60ml milk

Mix all the cake ingredients ( can be done in food processor) Cook at 180c for 15-18 mins

150g icing sugar
75g butter
yellow food colouring ( I left this out)
lemon flavouring
3 meringue nests

Beat the icing sugar and butter til light and fluffy, add food colouring and lemon flavour and mix well.

Spread icing over the top of muffins and sprinkle over bashed meringe nests. (Kids like doing this bit)

Nigellas cherry chocolate cup cakes are divine, and really easy to make. You can make them with gluten free flour, which would give added appeal as theres never anything that gf children/adults can have from cake stalls normally.

Icing with lots of brightly coloured sweets, they sell first time after time.

I learnt several years ago to compromise my artistic integrity for the sake of the school cake stall.

I'm a fan of traybakes for this type of thing. How about Bakewell hearts? Make a big sheet of Bakewell, ice it then stamp out heart shapes using a cookie cutter. Those little heart shaped sprinkles look lovely on top. When you're sick of eating the offcuts (this can happen, believe it or not), they make a nice pudding with some custard.

l;emon flavouring is found with allt he baking stuff, alongside vanilla essence etc. I don't think you could use juice, as it wouldn't be concentrated enough so the amount you would need to use would make the icing runny.

We do a regular cake stall at our school. I make cup cakes. The most popular ones are iced in chocolate butter cream with a single Minstrel and gold glitter.

Or butter creamed then dipped in a bowl of hundreds and thousands so they are completely covered.

Or with a little flower made of Smarties.

I made a tray bake of choc brownies and cut into indivual slices they went down well and were very simple and easy to transport

If you fill sweet cases with a teaspoon of melted chocolate and push mini marshmallows on top (you can easily make masses from one slab of chocolate) - children love them and they sell like hot cakes.

i make fish cakes for any cake stall events and they go really quick.
Fairy cakes, cover in melted white chocolate break some fan wafers in half and use half to make a fish tail. Put white chocolate buttons on to make scales. Abit more white chocolate on the tails and some rainbow sprinkles. Easy and effective!
