I need buttermilk for a cake recipe and can't get any in my nearest supermarket. Could I replace it with a mixture of milk and cream or something?

Thanks!

milk and lemon Juice mixed and leave for about 5 mins till it goes lumpy. I use it to make soda bread.

Half plain yoghurt and half semi skimmed milk are what nigella recommends. I've swopped it many times and its fine.

Thanks Shaun - it sounds disgusting!

How much lemon juice would I add? If it goes lumpy do I need to seive it or blend before using? (you can tell I don't normally bake!)
