Good things to put in toasted sandwiches please

I have just had my first toasted sandwich in ages thanks to a toaster bag - basically a silicone paper bag that fits inside the toaster, so you can toast whole sandwiches instead of just the bread. I had brie and parma ham, and it was delicious. What are your favourite things in toasted sandwiches, and your DCs? I don't live in the UK so cheddar is only an option for me occasionally.

Tomato and mozzerella (sp?) it's nice with a bit of basil in there too.
Cheese and mushroom
Banana and maple syrup if you fancy something sweet

when I read the title i thought you meant in a sandwich toaster and would have suggested broken up galaxy chocolate, but i dont think that would work in a toaster bag.

Mmmm banana sandwiches. Would have one of those now except I finished the bananas for breakfast, on toast

Trikken, I will not give up on your chocolate idea without trying it first. Will report back.

Bucharest, I bet that would be nice with slivers of red onion too.

Any more ideas please? I have limited cooking facilities so am disproportionately excited by this development.

You may need to test out your locally available cheeses for something with the same melting qualities as cheddar though

at university, the Christian Union ran a late night toastie bar in the JCR. 20p and a quick prayer for a freshly made toastie.

Anyway, favourite fillings were:

baked bean and cheese
cheese and marmite
mars bar
banana and nutella
banana and peanut butter

rather less sophisticated than some of your earlier suggestions, but no less delicious

Portofino my sisters ultimate favourite toasted sandwich is cheese and beans. (tho beans can get v hot!)
