Lone Pudding Eater- Strategies

I am the only pudding enthusiast in our household, there are some puddings that other members will eat but generally I am the one who loves hot puddings of the sort my mother used to make.
I am about to put a rhubarb crumble into the oven after a debating wether to
a] stew the rhubarb and freeze portions to cover with also portioned and separately frozen crumble mix as needed. What a faff!
b] Make up individual portions, uncooked to freeze.
c] make up individual portions and cook then freeze.
d] what I am doing- make one big crumble, cook then eat some tonight, warm up bits tomorrow and eat some cold at any other time.

What is the best solution for lone pudding lovers?

Make two medium-sized crumbles, freeze one and eat the other?
