Anyone have any good Tapas recipes please?

We have just come back from Spain and would love to hold a Tapas evening.

Any help or ideas on what to serve please?

Houmous and pitta cut into small pieces (probably mezze or lebanese though
Olives
small pieces of roasted aubergine with a spicey tapenade coating

and see here for some good ideas too, you can cut the larger dishes into small pieces and arrange on plates. I love tapas.

tortilla cut up into little squares, marinaded olives. potatas bravas, tapenade, god i could go on but i am trying to lose weight and even thinking about tapas makes me swell

keep it simple, i.e. make about 3 things and get nice bread and olives otherwise you will be miserable and tired by the time folk arive (voice of experience)

ruddynorah! we get 3 things each if we are snacking of an evening, but sometimes more! If it is moroccan, we sometimes get a tagine to share plus tons of tapas!

Fry slices of chorizo with dried chilli and red wine till the wine gets reduced and sticky. Tis fab.

Also marinated anchovies from Waitrose are great.

Fry some blanched skinned almonds until golden and mix with sea salt and smoked paprika.

Stuffed peppers.

pan tumaca - get some rustic baguette style bread. Cut it into about inch thick slices. Rub each slice with good olive oil and garlic. Then slice a tomato in half and rub this over the bread, so that the seeds and juice come out. Sprinkle on some salt. Delicious served with some serrano ham.

Little gem lettuces with anchovies.

At home the Spanish might just put out some sliced chorizo, jamón serrano, lomo etc, plus some manchego cheese with bread.
